Ucayali River Cacao is a central fermenter located near Pucallpa, Ucayali, Peru. Ucayali River Cacao partnered with USAID and Alianza Peru to give local farmers access to an alternate market to cocaine. Working with around 400 smallholder farmers with one to three hectares of land each, Ucayali River Cacao purchase wet cacao at a premium price and only select the best for sale.The main strength of their business is that: “While most of the farmers in our area have lots of CCN-51, we work only with ICS, TCH, IMC, CMP and local varieties that are known as “comun”. This mixture of varieties combined with frequent collaboration with Daniel O’Doherty of Cacao Services enables us to produce a unique cacao for our customers.”Ucayali River Cacao has been credited for various chocolate awards for award winning quality beans and well received by buyers for its unique flavour profile.
Mostly Trinitario clones (ICS-1, ICS-39, ICS-95, TSH-565), with locally selected cultivars and older seedlings of native Peruvian origin.
Delicate cocoa base with very mild fruit and floral notes of spice and light wood. Very low bitterness and astringency. Overall soft and delicate profile.
Moderate size beans with 85-95 beans per 100 grams. Mechanically sorted to remove flat beans and other defects.
