The hmiss is prepared everywhere in Algeria, with small differences from one region to another. Thus, in eastern Algeria, it is prepared with garlic, tomatoes and roasted peppers. We start by putting the garlic, chopped tomatoes and oil in a pan for a few minutes, then add the peppers and crush everything well with a fork or in a wooden mortar, the mehraz. It is then served on a plate.
